One thing I always, always order when hitting happy hour at the bar is a basket of fries.
There’s just something about salty crispy fries that go so well with friends and a drink!
A few of our local restaurants serve garlic fries and they’ve become my new favorites.

Ingredients for garlic fries
To make garlic fries at home, you need just a few ingredients.
Frozen french fries – You’ll need a 28- or 32-ounce bag for this recipe. I usually use “regular cut” fries to make garlic fries.
Make sure the fries are unseasoned!
Olive oil – The oil is used for cooking the garlic, and it helps the other ingredients adhere to the cooked fries.
Garlic – I recommend a whole bulb of garlic for these fries. If you want to use more, go for it!
Salt – Season your fries to taste.
Grated parmesan cheese – I love the combo of garlic and parmesan. Use freshly grated parmesan, which has a better texture for melting to the fries. Canned/granular parmesan will work in a pinch if needed.
Parsley – Chopped parsley adds a pop of color and bright taste to the fries.
How to make garlic fries
Preheat the oven and cook the fries according to the package directions. If you prefer to use an air fryer, go for it!
While the fries are cooking, get the garlic ready.
There are a few different options for preparing the garlic with these fries.
If you like the bite of raw garlic, simply mince, grate, or press the garlic and mix it with a little olive oil.
For roasted garlic fries, roast the garlic while the fries are cooking. Slice the end off the bulb, drizzle on a little olive oil, and wrap in a foil packet.
Once roasted, squeeze out the cloves and mash or chop.
I like to cook the garlic for just a few minutes. Sometimes I make it crisp, sometimes just softened — just be sure to not burn it!
To saute, combine the minced or pressed garlic with 2 tablespoons olive oil and ½ teaspoon salt in a small pan.
Heat over medium low for 3 or 4 minutes, stirring constantly to prevent burning.
Transfer to a small bowl. Set aside while the fries finish baking.
Once the fries are crisp to your liking, transfer to a large bowl.
Drizzle on the garlic with the oil and toss well to coat.
Add the grated parmesan cheese and chopped fresh parsley, then toss again to mix.
Transfer to a bowl or platter to serve. Add more parmesan or parsley for garnish, if you like!
Garlic fries are best served immediately.
If you don’t plan to eat them all, I recommend halving the recipe or only making as much as you need.
You can reheat garlic fries in the oven or air fryer, but take care to not have the oven too hot, or the garlic can burn.
Serve with aioli, barbecue sauce, or ranch dressing for dipping.
Make the fries spicy by adding crushed red chile flakes or a sprinkling of chili powder.

- 1 28-ounce bag frozen french fries
- 2 tablespoons olive oil
- 1 bulb garlic
- ½ teaspoon fine sea salt
- ¼ cup grated parmesan cheese
- 2 tablespoons chopped fresh parsley
- Cook fries according to package directions.
- Meanwhile, heat olive oil in a small saucepan over medium low. Chop or press garlic and add to the olive oil along with salt. Cook 5 minutes, stirring to prevent garlic from sticking or burning. Pour into a bowl and set aside while fries finish cooking.
- Transfer fries to a large bowl. Pour over the garlic olive oil and toss with tongs. Add the parmesan and parsley and toss again.
- Serve immediately, with additional parmesan or parsley on top as desired.
