Ingredients for strawberry Chex mix
Full list of ingredients including quantities is located in the recipe card.
You’ll need:
- Rice Chex
- Corn Chex
- White chocolate chips
- Shortening
- Powdered (confectioner’s) sugar
- Freeze-dried strawberries
- M&Ms
Freeze-dried strawberries are found near the dried fruits and nuts at the grocery store. You want the kind that is completely dry, not the chewy variety, because we’ll be turning it into a powder.
The shortening is used to help make the white chocolate coating smooth. You can use vegetable oil if you prefer.
How to make this recipe
Measure the cereals into a large bowl and set aside.
Pour the dried strawberries into the bowl of a food processor and blitz until powdered. It’s OK if there are a few larger bits, but nothing too large!
Combine the powdered strawberry and powdered sugar in another bowl and set aside.
Pour the white chocolate chips into a microwave-safe bowl and add the shortening.
Microwave in 30-second bursts, stirring after each time, until completely melted and smooth.
Pour the melted white chocolate over the cereal and stir well to coat the cereal as evenly as possible. Make sure to scrape up from the bottom of the bowl!
Sprinkle on half of the powdered sugar mixture and stir well, then add the rest and stir to coat completely.
Stir in M&Ms if desired and serve!
Storage tips
Strawberry Chex mix will keep for about a week when stored properly. It does not need to be refrigerated.
Store it in an airtight container like a large Ziploc bag or lidded bowl, or store in a large bowl covered with plastic wrap.
This snack mix packages easily for Valentine’s Day treats or goody bags! Use patterned bags and twist on a red pipe cleaner to close.
Recipe suggestions
If you want to add even more strawberry flavor, you can mix in extra dried strawberries to the Chex mix.
Want to make it sweet and salty? Stir in pretzel rounds or squares, or add lightly salted peanuts.
You can also change up the cereal used in this mix! Choose your favorite flavor of Chex, or try with other cereals like Crispix, Cheerios, Kix, and others.
Enjoy this strawberry Chex mix the next time you’re craving something sweet!
