In a large mixing bowl, stir together the peanut butter and maple syrup.
Add the rolled oats and mix until evenly coated and there are no dry oats remaining. If the mixture is not coming together, add a bit more peanut butter or maple syrup. Stir in the chocolate chips.
Using clean hands, portion mixture into balls about the size of a ping-pong ball. Roll and pack the ball between your hands, shaping it like you would a snowball, to make it firm and round. Set on a tray and repeat until all the balls are formed.
Chill in the refrigerator at least 2 hours before serving. Store in an airtight container in the refrigerator or freezer.

Makes about 20 balls.
If your peanut butter is very thick, warm it in a microwave-safe bowl for 15-30 seconds, until just melted.
