Peanut Butter Oat Balls

Ingredients

  • 1/2 cup creamy peanut butter
  • 1/4 cup pure maple syrup
  • 2 cups rolled oats
  • 1/4 cup mini chocolate chips

Instructions

  • In a large mixing bowl, stir together the peanut butter and maple syrup.
  • Add the rolled oats and mix until evenly coated and there are no dry oats remaining. If the mixture is not coming together, add a bit more peanut butter or maple syrup. Stir in the chocolate chips.
  • Using clean hands, portion mixture into balls about the size of a ping-pong ball. Roll and pack the ball between your hands, shaping it like you would a snowball, to make it firm and round. Set on a tray and repeat until all the balls are formed.
  • Chill in the refrigerator at least 2 hours before serving. Store in an airtight container in the refrigerator or freezer.

Notes

  • Makes about 20 balls.
  • If your peanut butter is very thick, warm it in a microwave-safe bowl for 15-30 seconds, until just melted.
