Flavored with garlic and dijon mustard, this homemade aioli is an easy condiment upgrade.

Ingredients

  • 1 clove garlic chopped
  • Salt to taste
  • Peppercorns to taste
  • 1 egg yolk
  • 1 teaspoon dijon mustard
  • 1/2 cup olive oil
  • 1 teaspoon lemon juice

Instructions

  • In a mortar bowl, crush together the garlic, salt, and peppercorns to create a paste.
  • Add the egg yolk and dijon mustard, mixing until blended. Make sure to scrape down the sides of the bowl to mix.
  • While mixing, add the olive oil a few drops at a time. Once it starts to thicken, increase to a slow drizzle while continuing to mix.
  • Once it is thick like mayonnaise, mix in the lemon juice until blended.
  • Taste and adjust seasoning. If needed, thin with a teaspoon of cold water.
  • Serve immediately or cover tightly and chill in the refrigerator to meld flavors. Store for up to 1 week.
